The pandemic set the restaurant industry back in many ways, but also propelled it forward in terms of gaining technological advancements. Restaurants will continue to face uncontrollable external factors this year, but will find themselves more prepared to adapt as necessary. In 2020 alone, it is estimated that over <a href=\"https:\/\/fortune.com\/2021\/01\/26\/restaurants-bars-closed-2020-jobs-lost-how-many-have-closed-us-covid-pandemic-stimulus-unemployment\/\">110,000<\/a> food and drink establishments permanently closed. The title of a <a href=\"https:\/\/time.com\/6129713\/restaurants-closing-covid-19\/\">Time.com article<\/a> said it best, \u201cMost Restaurants Fail. COVID-19 Made the Odds Even Worse\u201d.<\/p>\r\n\r\n\r\n\r\n<p>As we enter the third year of the pandemic, restaurant businesses have had the time and opportunity to incorporate contactless tech and streamlined delivery to create a safer dining experience. A recent survey found that <a href=\"https:\/\/morningconsult.com\/return-to-dining\/\">63 percent<\/a> of Americans now feel comfortable eating at a restaurant. In 2019, the ghost kitchen industry was valued at <a href=\"https:\/\/www.statista.com\/topics\/7563\/ghost-kitchens\/#dossierKeyfigures\">$40 billion<\/a> USD, and in 2030, the value is expected to hit <a href=\"https:\/\/www.washingtonpost.com\/business\/2020\/09\/17\/virtual-ghost-kitchen-restaurants\/\">$1 trillion<\/a> USD. Even as consumers return to indoor dining, ordering food online from delivery-only concepts has become a habit, especially <a href=\"https:\/\/www.parable.global\/blog\/how-virtual-kitchens-have-grown-in-popularity\">amongst millennials<\/a>. Adopting ghost kitchen brands is an opportunity for existing local and independently owned restaurants to maximize their operational capacity and take advantage of slow hours (as well as times periods such as early morning and late-night where they might not be open).<\/p>\r\n\r\n\r\n\r\n<p>Despite the success of ghost kitchens, there are still lessons to be learned in this still nascent industry. Reef Technologies frequently found itself in legal trouble due to violations and operating without permits; the company announced recently that it would be shutting down <a href=\"https:\/\/www.restaurantdive.com\/news\/reef-signs-expansion-deal-with-dennys-amid-closure-of-95-units\/617093\/\">95 units<\/a>.\u00a0<\/p>\r\n\r\n\r\n\r\n<p>With ghost kitchens comes a lack of transparency. Pick-up lockers and shelves allow customers to snag their to-go orders without talking to anyone. These technologies helped restaurants survive during the pandemic, but consumers will maintain these expectations post-pandemic. Taco Bell is unveiling its <a href=\"https:\/\/www.foxbusiness.com\/lifestyle\/taco-bell-4-lane-drive-thru-concept-restaurant-contactless-ordering\">new concept<\/a> (called Taco Bell Defy) in Summer 2022 that prioritizes contact-free ordering with drive-thru lanes that will be dedicated to mobile or delivery order pickups and digital check-in screens where QR codes can be scanned for mobile orders. Panera Bread\u2019s <a href=\"https:\/\/www.nrn.com\/fast-casual\/panera-bread-s-new-caf-redesign-featuring-double-drive-thru-and-new-brand-logo-opens\">new caf\u00e9 design<\/a> incorporates a double drive-thru, contactless dine-in, and delivery made possible via phone ordering. After grappling with the woes of the pandemic, restaurants are now facing a new set of challenges from global supply chain issues and inflation. In the U.S., we have already seen shortages of ingredients like chicken wings, ketchup, and cream cheese, and who knows what the following week will hold. The U.S. food delivery market\u2019s projected revenue for 2023 is a whopping <a href=\"https:\/\/www.businessofapps.com\/data\/food-delivery-app-market\/\">$33 billion<\/a>. When consumers were holed up at home throughout 2020 and 2021, they turned to delivery when home cooking became a burden. Consumers are accustomed to receiving a culinary experience delivered to their doorstep while they wear comfy clothes and watch Netflix- why would they opt for going out to eat at the frequency they did pre-pandemic?
